Avocados from Mexico: Avocado Chili Brownies

My family eats a lot of fruits and vegetables, especially now that we are trying to eat healthy as much as possible. One fruit that we absolutely can’t live without is avocados. They are an excellent source of healthy fat, so we try to eat them on a daily basis. My whole family loves them, especially my twin girls. We like to slice them up and put them on pretty much anything — salads, wraps, sandwiches, tacos, soups — but our favorite way to enjoy them is in guacamole. I can’t even make a batch without it disappearing in minutes!

I tend to use avocados the same way every day, so I decided that I should find new ways to use them. The Avocados from Mexico Community has been a great resource for me. There are tons of avocado recipes that community members have submitted, an avocado blog with recipe ideas, an avocado channel where you can view recipe tutorials, and there’s even a Chef’s Corner where you can find avocado recipes from top chefs. There are so many great features of the site, but I find myself spending the most time looking through all of the yummy recipes. I have found so many that I want to make!

The recipe for Avocado Chili Brownies Topped with Avocado Tequila Ice Cream from chef Muy Bueno definitely caught my eye and made my mouth water. I’ve never used avocados for baking, so I was intrigued with the idea and knew it was a recipe I had to make.

Avocado Chili Brownies Topped with Avocado Tequila Ice Cream

Ingredients

For the Avocado Tequila Ice Cream:

  • 3 large ripe avocados from Mexico, halved pitted and peeled
  • 1 1/2 cups heavy cream
  • 1 1/3 cup sugar
  • 1/4 lime juice
  • 2 tablespoons gold tequila
  • 2 tablespoons chopped cilantro

For the Avocado Chili Brownies:

  • 1 pinch of sea salt
  • 1 1/4 cup flour
  • 2 tablespoons unsweetened dark cocoa powder
  • 1 teaspoon chili powder
  • ½ teaspoon cinnamon
  • 10 ounces dark chocolate chips
  • 1 stick butter
  • 1 ripe large avocado from Mexico, halved, pitted and puréed
  • 1 1/2 cups granulated sugar
  • 1/2 cup dark brown sugar
  • 5 eggs, divided
  • 2 teaspoons vanilla extract

Instructions

Avocado Tequila Ice Cream:

  1. In a blender or food processor, purée avocado until smooth.
  2. Add cream, sugar, lime juice, tequila, and fresh cilantro. Mix until combined. Churn mixture in ice cream maker for approximately 25 minutes.
  3. Transfer to air tight container and place in freezer for 1 to 2 hours allowing time for the ice cream to set. Can be stored in the freezer for 1 week.

Avocado Chili brownies:

  1. Preheat oven to 350 degrees F.
  2. Butter and flour a 9”x13” pan.
  3. In a medium size bowl combine salt, flour, cocoa powder, chili, and cinnamon. Set aside.
  4. In a double boiler, melt chocolate and butter until smooth, add puréed avocado and stir until completely combined.
  5. Turn off heat and add granulated sugar and brown sugar, stir until combined. Remove bowl from double boiler and cool to room temperature.
  6. Add 3 eggs, vanilla, and stir until combined.
  7. Add remaining eggs and stir until combined.
  8. Slowly fold in dry ingredients.
  9. Pour into prepared pan and spread out evenly.
  10. Bake for approximately 30 minutes.
