Life is always a little more crazy when the kids go back to school. I try to make it easier by planning quick and easy meals for the week. One meal that I always turn to on busy school nights is my mom’s recipe for tuna melts. Not only are they quick and easy to whip up, they are healthy too. It’s been one of my favorite meals ever since I was a kid and now it’s one of my family’s favorites!
Unlike traditional tuna melts made with two slices of bread, these tuna melts are open faced and made with whole grain english muffins. They are broiled in the oven to allow for quicker cooking time and only require a handful of ingredients — whole grain or whole wheat english muffins, tuna, light mayonnaise, salt & pepper, onions, tomatoes, and cheddar cheese. You probably have most (if not all) of these ingredients on hand already.
From start to finish these tuna melts only take about 15 minutes. The key to making them quickly is to toast the english muffins first. This allows them to get a little crispy before you broil them in the oven. You can also save time by using Bumble Bee® Premium Albacore Tuna or Light Tuna in pouches. There’s no draining required — simply open the pouches and dump the tuna right out. Of course, you can always use Bumble Bee® tuna in cans too. They work just as good!
I love that these handheld tuna melts are full of flavor and easy to eat. The combination of tuna and melted cheese on a toasted muffin is the perfect comfort meal without all the calories. Even my picky eaters gobble them down and rave about how delicious they are. I recommend pairing them with fresh green beans, corn on the cobb, or a garden salad.
Easy Tuna Melt Sliders
Ingredients
- 4 whole grain or whole wheat english muffins
- 2 cans (5oz) or 2 pouches (5oz) of tuna
- 1/2 cup light mayonnaise
- 1 small yellow or red onion
- 1 large tomato
- 8 cheddar cheese slices
- salt & pepper to taste
Instructions
- Preheat oven broiler.
- Cut english muffins in half and toast until crispy.
- While muffins are toasting, cut onions and tomatoes into slices and mix tuna with light mayonnaise.
- Spoon tuna mixture onto toasted muffin halves and layer with salt & pepper, onion, tomato and cheese slices.
- Place muffins on baking sheet lined with foil and broil on center oven rack for 5 minutes or until cheese is melted.

Oh yum, this looks really good and so easy, which I love. The kids don't like tomatoes so I would leave that off for them but will have to try this.
