These Berry Frozen Yogurt “Cupcakes” are perfect for summer! They are quick and easy to make, not to mention healthy and delicious!

Unlike normal cupcakes made with unhealthy ingredients, these cupcakes are made with Cool Whip, yogurt, fruit puree, whole berries and graham crackers. If you’re craving a frozen treat, but want to watch your calories or sugar intake, these are a great option. The great thing is you can customize them to your liking by using your favorite yogurt (Aussie, Greek, sugar-free, non-dairy, etc.) and berries (blueberry, strawberry, raspberry, etc.).

Berry Frozen Yogurt Cupcakes

Yield: 12

Ingredients

  • 1 Package of Cool Whip
  • 1 Cup of Yogurt (Vanilla or Any Berry Flavor)
  • 1 Cup of Fruit Puree (Any Combo of Berries)
  • 1/2 Cup Whole Berries (Any Combo of Berries)
  • 6 Graham Crackers (Crumbled)

Instructions

  1. Line a muffin tin with 12 paper baking cups.
  2. Add the Cool Whip, yogurt, fruit puree and whole berries to a large bowl. Use a masher to combine.
  3. Divide the mixture equally into the 12 baking cups.
  4. Top each pie with the crumbled graham crackers (to taste).
  5. Place the muffin tin into the freezer and let set for a minimum of 3 hours.
  6. Enjoy immediately after freezing or remove cups from tin and place in a Ziploc bag to remain frozen until ready to eat.
