Sure, it’s exciting to watch my favorite team play, but what I really love about it is the quality time I get to spend with my family and friends, and of course, all the yummy food I get to eat. There’s no better excuse to get everyone together to relax, have fun and eat!

When it comes to preparing food for Game Day, I like to keep it simple. I don’t have time to spend the whole day in the kitchen cooking, so quick and easy recipes are a must. I couldn’t do this without my slow cooker! It’s my go-to for main dishes, like these Slow Cooker Tex-Mex Chicken Burrito Bowls.

My family loves Tex-Mex food. Tacos, burritos and fajitas are always in our weekly rotation. Lately, we’ve been on a big shredded chicken burrito kick, so I decided to make them for Game Day, only this time I gave them a fun twist with Old El Paso’s Taco Boats made with whole wheat tortillas. They were a huge hit!

These shredded chicken burrito bowls are simple to make, and best of all, full of flavor. Your guests will love them! Simply cook the chicken in your slow cooker {recipe below} and then build your bowls to your liking. The nice thing is you can prepare the chicken ahead of time and keep it warm until you are ready to serve.

We layered our bowls, aka tortilla boats, with Old El Paso refried beans, cilantro rice, shredded chicken, lettuce, tomato, cheese, salsa and sour cream. I think they would be amazing with guacamole too. The more toppings the better!

Ingredients

  • 4-5 chicken breasts, thawed or frozen
  • 1/2 cup water
  • 1 Old El Paso Chicken Seasoning packet
  • 1 cup long-grain rice, uncooked
  • 1/2 cup cilantro, chopped
  • 1 can Old El Paso Refried Beans
  • 1 package Old El Paso Whole Wheat Taco Boats
  • 2 cups lettuce, chopped
  • 1 tomato, diced
  • shredded cheese
  • sour cream
  • salsa
  • any additional toppings you like

Instructions

  1. Place chicken breasts in slow cooker and cover with 1/2 cup water and seasoning packet.
  2. Cook on high 3-4 hours or low 6-7 hours.
  3. Shred chicken with two forks and stir well. Turn slow cooker down to warm and let chicken set for 20-30 minutes to allow it to soak up the seasoning mixture.
  4. Prepare rice according to package instructions. Add cilantro and stir to combine.
  5. Warm refried beans and taco boats according to package instructions.
  6. Layer rice, beans, shredded chicken and desired toppings in Taco Boats.
  7. Enjoy!

Notes

Recipe makes 8 taco boats. Double the recipe for a larger crowd.
