I always feel so much better when I eat a clean diet filled with fresh fruit and vegetables, whole grains and lean meat.
I’ve found that one of the easiest ways to incorporate vegetables, and even protein, into your diet is to eat a big salad every day. I usually make mine with mixed greens, chicken, and other toppings like cucumbers, tomatoes and onions. I’ve been wanting to branch out and try new some new recipes and this Mediterranean Chicken Salad does not disappoint!
This Mediterranean Chicken Salad is delicious and packed full of flavor. It’s also super easy to make! All you need is Tyson® Grilled & Ready Chicken Breast Strips, mixed greens/spring mix salad, chickpeas (garbanzo beans), cooked quinoa (I use a boxed quinoa & brown rice blend), hummus, crumbled feta cheese, cherry tomatoes, red onion and Greek or Balsamic Vinaigrette dressing.
The key to this recipe being so simple is using Tyson® Grilled & Ready Chicken Breast Strips. The strips are fully cooked, so all you have to do is warm them up in the microwave or a pan and then add them to your salad. They are a great source of protein and I love how easy they are to prepare. They make meal prep a cinch, which is helpful when you are trying to stay track with your health and fitness goals.
This salad is great for lunch on the go or busy weeknights when you don’t have time to cook. Unlike other salads, this one will leave you feeling full and satisfied. The nice thing is you can prepare it ahead of time — just leave off the hummus and dressing and refrigerate until you are ready to eat.

- 3 oz Tyson® Grilled & Ready Chicken Breast Strips (approx. 4 strips)
- 2-3 cups mixed greens/spring mix
- 2 tbsp chickpeas (garbanzo beans)
- 2-3 tbsp cooked quinoa & brown rice blend
- 2 tbsp hummus (I used a Mediterranean flavor)
- 2 tbsp crumbled feta cheese
- 3-4 grape tomatoes
- 2-3 slices red onion
- 2 tbsp Greek vinaigrette dressing
- Prepare chicken breast strips as directed on package.
- Add mixed greens to large bowl or plate and top with chicken and remaining ingredients.
- Serve immediately and enjoy!
