Game Day is so much more to me than just watching football. Sure, it’s exciting to watch my favorite team play, but what I really love about it is the quality time I get to spend with my family and friends, and of course, all the yummy food I get to eat. There’s no better excuse to get everyone together to relax, have fun and eat!
Let’s be honest — food is what really brings us together on Game Day. From beans dips to buffalo wings to burgers, there’s a whole lot to love. And don’t even get me started on all the yummy desserts!
When it comes to preparing food for Game Day, I like to keep it simple. I don’t have time to spend the whole day in the kitchen cooking, so quick and easy recipes are a must. I couldn’t do this without my slow cooker! It’s my go-to for main dishes, like these Slow Cooker Tex-Mex Chicken Burrito Bowls.
My family loves Tex-Mex food. Tacos, burritos and fajitas are always in our weekly rotation. Lately, we’ve been on a big shredded chicken burrito kick, so I decided to make them for Game Day, only this time I gave them a fun twist with Old El Paso’s Taco Boats made with whole wheat tortillas. They were a huge hit!
These shredded chicken burrito bowls are simple to make, and best of all, full of flavor. Your guests will love them! Simply cook the chicken in your slow cooker {recipe below} and then build your bowls to your liking. The nice thing is you can prepare the chicken ahead of time and keep it warm until you are ready to serve.
We layered our bowls, aka tortilla boats, with Old El Paso refried beans, cilantro rice, shredded chicken, lettuce, tomato, cheese, salsa and sour cream. I think they would be amazing with guacamole too. The more toppings the better!
