The school year is always chaotic for us. Between school and evening sports practices, we aren’t left with a lot of family time during the week. I like to make sure that we at least sit down for a healthy, homemade dinner together as a family. I also like to involve the kids in the cooking as much as possible. They love helping and it’s a great way to connect after a long day at school.
On school nights, I try to plan meals that are quick and easy, while still being healthy. One of my family’s favorite meals is Homemade Mini Pizzas. They are easy to make and the kids love being able to make their own yummy creations.
Homemade Mini Tortilla Pizzas
Ingredients
- 1 package of tortillas
- 1 14 oz jar of pizza sauce
- pizza toppings (pepperoni, italian sausage, mushrooms, etc.)
- 1-2 cups shredded mozzarella cheese
Instructions
- Heat oven to 400 degrees.
- Spray or grease cookie sheet.
- Using a pizza cutter, cut the edges off the tortillas to form squares.
- Spread each square with pizza sauce and add toppings.
- Bake for 6-8 minutes or until cheese is melted and the tortillas are crispy.
There are many different ways you can make the “crust” of your pizza. You can use biscuits, pre-made pizza dough, tortillas or flatbread. You can also make your own dough if you have time. Try experimenting to see which way your family likes them best!
My kids like using tortillas the best. They are a healthier, lower calorie option. The best part is after you bake them, they are crispy just like thin crust pizza. We usually cut the tortillas into squares, but you could leave them just the way they are or cut them into smaller circles.
Now to the fun part — toppings! I set up a topping bar with lots of different choices and let the kids build their own pizzas. I like to put out pizza sauce, turkey pepperoni, mushrooms, onions, green peppers, spinach, and Horizon Organic Mozzarella Shredded Cheese. Sometimes we have leftover grilled chicken or taco meat and that is great to add as well. If you are vegetarian or like to do Meatless Mondays, it’s super easy to just put out a ton of fresh veggies!
Once our pizzas are built, we put them on a cookie sheet and bake them. After just 6-8 minutes, they are ready to eat!

I love make mini pizzas with the kids. Everyone can personalize there pizza to there taste. It makes a great after school snack too. We use English muffins or tortillas to make them.

Now this is one I can handle and pizza is my kids favorite. Being a single dad of 5 and not a chef, I like to find things quick and easy to make for them. Even for one of their little snacks, this will work
